There are two popular restaurants in Portland that have similar, healthy rice & bean bowls: Cafe Yumm and Wholebowl. To make these delicious, wholesome bowls at home I did some research and created my own version of their secret sauces.
To create your own delicious bowl, layer these ingredients in individual bowls, and serve:
Brown Rice
Black Beans
Yumm / Tali Sauce (see recipe below)
Cheddar Cheese, Shredded
Black Olives, Chopped
Avocado
Salsa
Cilantro
Ashley's Yumm / Tali Sauce:
Serves 6-8
In a food processor, blend the following items until mixture is a creamy, almost smooth consistency:
1/2 cup Almonds, sliced or chopped
1/2 cup Canola Oil
1/2 cup Garbonzo Beans
1/4 cup Lemon Juice
3 tsp Garlic, Chopped
Add the following items to the nut/bean mix in the food processor and mix until smooth:
2 tbsp Brewers/Nutritional Yeast (in the bulk section at Whole Foods)
1 tsp Mustard Powder
1/2 tsp Dijon Mustard
1/2 tsp Ginger (powder)
1/2 tsp Curry
1/2 tsp Coriander
1/2 tsp Salt
1/8 tsp Pepper
1/4 cup Water (or a little more if sauce is too thick)
Serve immediately, and refrigerate leftover sauce.
