From Judy's Kitchen :: Banana Muffin Recipe

Judy & I made some delicious banana muffins this weekend. The recipe is low in cholesterol &  has reduced fat. Don't worry, the muffins are so good that you won't notice you're being 'healthy'. Enjoy!




Banana Muffin Recipe

Combine & whisk the following ingredients in a large bowl:

2 cups all-purpose flour
3/4 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt

In a separate bowl, combine the following ingredients:

1 large egg
1 1/2 cups mashed ripe bananas (about 3 bananas)
1 tablespoon vegetable oil

Add the flour mixture and whisk together with a few light strokes just until the dry ingredients are moistened (we added 1 tablespoon of milk,  you could also add yogurt if you prefer).  Do not over mix the batter; it should not be smooth.

Divide the batter among the muffin cups (we used muffin papers for easy clean up). Bake until a toothpick can be inserted in the muffins & comes out clean. Our muffins were done in 25 minutes. Let cool on rack & serve.  We found that these muffins did well reheating in a 300 degree toaster-oven or oven.

Makes 12 muffins.
